Spanish style meatballs
I came up with this a while back and to be honest (and not very modest) I love this dish as it's pretty quick and very easy to make and it adds a bit of variety to standard meatballs in a tomato sauce. Plus it's done in one pot so it's perfect for a mid-week dinner.
Ingredients

12 meatballs

Chorizo (around 100g)

½ courgette

1 medium red onion (feel free to use a white onion, I just prefer red)

6 mushrooms

2 handfuls spinach

4 cloves garlic

1 tbs paprika

1 tps chilli powder

1 tps cayenne pepper

500g carton passata
-
2 tbls olive oil

​​Method

Brown meatballs off in 1 tbls oil over a medium heat. Remove from pot and set to the side.

Drain fat from pot and add chorizo, cook for 2/3 minutes, remove and set to side with meatballs

Put 1 tbls spoon of olive oil in pot, add diced red onion and a pinch of salt and cook for 2-3 minutes until softened

Add diced courgette, sliced mushrooms, crushed garlic, paprika, chilli powder and cayenne pepper and cook for a further 2-3 minutes

Add spinach and stir through before adding passata and 50ml of water

Turn heat up to simmer for 15 minutes. Add meatballs and chorizo back to sauce and simmer on a low heat for 10 minutes

Serve with your favourite carbs (pasta or couscous is what I serve them with) or on their own as part of a tapas selection.
